I'll be doing 2 briskets for my son's HS Graduation party in June, so gonna hold back this weekend. Neighborhood meat-fest on sunday so I'll likely just sous-vide a tri-tip and bring a plate of bacon as an offering.

Alder plank Copper River salmon last night. It turned out fantastic. If you haven’t tried it I would highly recommend it. Copper River salmon is only available for a limited time and it is worth seeking out. I prefer alder plank rather than cedar but either will work and this technique makes for easy results with limited skill.

Today I’m smoking a “Thor’s Hammer” - 6 lb beef shank. This is the 1st time trying and it’s an all day process so I’m crossing my fingers that it’s worth it. Looks cool though.

Zippy just curious, where did you get this salmon ? I got an email from Tischler's in Plainfield on Friday that they had it...was 23/lb. I got a few pieces, grilled it on Saturday and was pretty great.
Plank sounds good, when i get something like that i like to go super simple and just grill w/ salt, pepper, olive oil and then lemon squeeze . when you got the good shit you don't need more

We got it at Tischler's as well. :lol:

We used a similar prep to what you noted although we put a lemon slice on top. The alder plank adds a very subtle flavor while also simplifying the grilling aspect.

While it's smoking? No sauce. Prior to the smoke salt it with kosher salt. When it goes on sprinkle with water and apply beef rub.

Tischler's (the butcher shop in Plainfeild not the fake store ) is having a BBQ class on 11/18 , it sounds like a good time im thinking about it. But it's a 5 hour event - 6pm-11pm. If you're going to have a 5 hour event why the hell wouldn't you do it on a Saturday or Sunday afternoon
