I am not sure it is an exact science, but an excellent idea. Think he just put 3 or 4 mustards, some onions and maybe some garlic in some tupperware.

The one thing he might have done is a minimal pre cook. Which I am going to say, was not his intention, but as it cools, it does draw in flavors. I think the pre-cook was just done for ease at MacFest

This is how I remember him describing how to make them (yes, he did pre cook them). One mustard was spicy brown, one just regular yellow and I think the third was a horseradish type mustard.
