we're eating beef from a grass-only animal from last year, almost no fat. enough that the butcher actually called me when they got the meat in the cooler. I am completely unimpressed with grass-fed: color and texture are quite different and cooking it is a real challenge: 3 mins oer side for pre-formed burger patties or they are like leather. we've taken to milk marinating the steaks to soften them up a little, and roasts are now all in the pressure cooker. hope we can get through the stash soon.
