one of the best chains on the east coast. actually one of the best toppings they have is a roasted cauliflower with garlic. the coal fire crust just made it that much better.

around here, i'm also partial to candlelight.

They used to make Maries at Hi Tops , next to Wrigley. Whatever deal they had, its like getting Palermos pizza at Red Ivy, same type of thing.

It did taste the same as the one on lawrence.

They did it when Hi Tops had the bar right outside the Diamondbacks stadium in Arizona as well.....that place was always packed with cub fans all year before they sold it!

So ... my general understanding of 'New York' pizza was that it was some floppy-crusted nonsense.

There's a new joint in town that purported to make pizza in a New York way. It is not 'floppy' in any sort of way whatsoever ... quite the opposite really - very crispy crust, even beyond what I've had at finer Chicago-style thin crust joints around here. I have every intention of going down there today for a couple slices.

What's the deal with that?

Ny is the crisp crust, larger slice. Very thin line between crisp and burnt! NYers claim the water in NY provides some flavor to the dough...which if you really think about is disgusting. either way, they call it a pie and its not good.

If you can't fold it up like a taco by folding up the crust part then it isn't authentic NY thin.

If the water making the dough is a factor, than that is just another plus for Chicago pizza. The Great Lakes area has the best tap water in the world.
