I felt that the shrimp sauce really brought out the natural flavor of the processed cheese and didn't overwhelm the ham.

Believe it or not, Doritos are made primarily from the hemp plant. The plant is stretched and beaten down into a cornmeal-like substance and then rejuvenated from there like most tortillas. It gets its rigidness from fructose, a touch of goat's milk (the inventor's son was lactose-intolerant), and a long-ass time in the oven. It's really quite fascinating. See the link below.
