You can use a couple of pieces of KFC as the burger's "bun", or make a burger using horse meat. You can get some from Jay Reminschneider's butcher.

Excellent. I'd go cotija and maybe pass on the crema depending on firmness of crema. Don't want it running out all over bottom bun and making the masterpiece impossible to eat.

I have a great salsa verde, but it's it's great because I have a giant pizza oven to slow cook tomatillos and jalapenos in. A good salsa should only have about 5 things in it.
