My wife is not a huge bbq flavor person but loves thai and Vietnamese. Next smoke I'm going to try some lemongrass sweet chili or something Korean.

Have you guys tried anything like that?

Anyone of you BBQ guys use a vortex? I see a lot of the pros use em. I was gonna get a 43$ on amazon unless somebody prefers a different one they own. Dozens of dofferent kinds for sale.

It's always a risk. I'm not a huge fan Home Depot food prep shopping, some do it and have good results. To each their own.

Doesn't that require a huge amount of fuel even if you're smoking a relatively small amount of food? Or do you only smoke in large quantities?

That's what I'm attempting this week.

Vacuum packing some brisket. Then sous vide-ing for about 36 hours @ 150-155°f.

Rubbing and smoking on Saturday for about 3 hours.

Although they don't take quite as much smoke as a typical smoking, this is hands down the way to go if you're entertaining.

The ribs turned out more meaty and juicy than I've ever had. Perfect texture.

The brisket is great.

36 hour sous vide bath plus 2.5 hours on the smoker for the brisket.

22 hours plus 1 hour smoke, 30 minute wrap, 20 minute sauce set for the ribs.

Total charcoal used...1/2 a 20lb bag.

Time saved...at least 10 hours.

Unless it's a rib contest, this is going to be my go to method.
