Straight up pork kind of grosses me out, but I can’t envision a proper meal without meat.

They've kind of screwed up pork in my opinion with the attempt to lean it out. Luckily they are beginning to add a bit more fat into them according to my hog growing neighbor. The addition of the saline to the product to make it more tender and dry out less has ruined the texture and flavor of the meat. You get a slower grown, outdoor raised Berkshire or a heritage, fattier breed vs the hybrid confinement hog and the chops and shoulders are loads better. Take it up to 300 pounds vs commercial weight and the marbling starts really showing up. I need to raise some hogs again. I hate raising hogs, destructive sobs.

I was telling my wife this week end how tasteless ham is now days.

Good to know what happened in the process to make it that way.

Outside of a good burger and occasional steak, I agree. Pork is versatile, affordable, and generally very tasty.
